Hi emptyhp,

Firstly in order to create contours in ArcGIS 10.0 you will need access to either the spatial analyst toolbox or the 3D analyst toolbox. To check you have this go to customize>extensions on the top menu bar and ensure there are ticks next to one/both of these extensions. If it tells you that you don't have a license for either of those then you may have to find another way.

To add your points go to file>add data>add xy data  and then browse to your spreadsheet - you will have to select the correct sheet within the spreadsheet as well. If you have problems at this stage then make sure 1) the spreadsheet is not open in excel and 2) there are no spaces or special characters in your column headings. You can then select your x and y fields and the appropriate coordinate system and add your data.

Before you can create contours you will need to interpolate a raster surface from your point data. To do this open arcToolbox and go to 3D analyst tools>Raster interpolation or Spatial Analyst tools>interpolation. There are a number of interpolation options and you can experiment which works best for your data. Assuming you pick IDW you then select your point layer as the input point features, choose your Z column as the Z field, choose the filename and output location for your raster and change the output cell size if you want to (this will affect the resolution of the raster you create). Then hit OK to create the raster and add it to your workspace.

Once your raster layer has been added you can go to either 3D analyst tools>Raster Surface>Contour or Spatial Analyst tools>surface>contour. Choose your new raster layer as the input raster layer, set a filename for the raster layer you want to create and choose a contour interval. Once that's done then hit OK and voila, you should now have a contour layer created based on your point data.
