What software are they using in that video? AFAIK none on my programs would support those features.

The program in the video is Adobe InDesign, but it also works in Illustrator or any other program whose font engine supports open type stylistic alternate characters. I suppose you could construct charts manually using a character map tool to copy/paste glyphs if your software doesn't have built in support, but that would probably be way more work than it's worth.
