How does one go about adding new fonts such as Frutiger to the drop down list in the Labels tab?

They just show up once you've installed them on your machine. If one isn't there, I go and install it (because it's always been the case that one that I thought was installed actually wasn't, since upgrading machines a year ago), and restart ArcMap.
