I had the same problem until quite recently. A client asked me to recreate some maps in Illustrator that were originally done in ArcGIS, and they used hatching patterns. So I sat down and after some trial and error figured it out. This is one of those things that looks very simple when you think about it (let's face it, lots of other apps can do hatching) and when you've figured the trick out, but in that period in between seem insurmountable ;)

Illustrator has lots of built-in line pattern swatches under the Swatch Panel Menu > Open Swatch Library > Patterns > Basic Graphics > Basic Graphics_Lines. And you can use the rotate tool to rotate just the pattern fill to any angle that you need.
