I just tried the "double-bordered polygons thing" -- how does one do that in illustrator if the path is not closed?

Copy your line, offset the copy and then use the divide pathfinder to split the offset line with the center line, then delete the unwanted side.
With AI CS2 it should be really easy as you can asign strokes to either side of the line on a multistroke line but this only works for polygons. Lame....
