Rendering of OSM data came up in another thread recently, which reminded me about Cloudmade. Here you can click on 'Change Style' and experiment with a range of styles for representing the data. Or make your own styles, come to that.

I'll second that for Cloudmade – impressive work they are doing and worth checking out. Playing with the style selector is not only fun, but also interesting to see how well their technical approach works.
