Have a look at:

A great site about shaded reliefs. It is made in the spirit of Eduard Imhof. It also has a nifty Java Applet where you can change the direction of the light source.
and also:
http://www.shadedrelief.com/
Which has been noted elsewhere. More technical but also more practical than the first link.
