Just prepared this map... Experimenting a bit with a bevel effect on the land, and I think it turned out quite ok. I should, though mute the colors a bit. As you can see, the data is from a raster/grid analysis, and I was just to lazy to generalize it to nice curves (it is tricky to do in Illustrator with maintained topology).
