I'm drawing some maps in Illustrator, and I've set up Paragraph Styles for the feature numbers, building names, etc. But I get the file to look like I want it, save it, then a day or two later open it up and the labels have changed color! Not randomly, but all the labels that were blue will suddenly be white type, or the numbers that were white will all be black. It may be relevant that I import Paragraph Styles from a recently finished map to use in new maps as I create them.

I use Charcter Styles, rather than Paragraph styles for point or path labels, and I don't think I have ever had that exact problem. But I do seem to recall that importing a character stlye from another doc would bring in the general style but the color would defaulted to black or something like that.
Maybe give Char Stlyes a try instead and see if that works better.

Well, I do have a character style set up for bolding some numbers in an index listing. So far, though, that's behaved normally.
When I first began using Illustrator early this year, I initially set up labels with Character rather than Paragraph Styles, but I soon came to believe that wasn't the right approach. I'll try to remember why.

I had a very similar problem but with character styles. It appears to be a bug. I've posted about it in the Adobe forums. Adobe apparently has no intention of fixing the bug, however. If you use their new CC libraries, the bug is fixed, but it persists into CC 2017 if you import normal character styles into a document. Some more info and a painful workaround here:
